Yes, this plugin allows you to quote selected categories and products as per your choice. So for this, Navigate to the general settings and here you will find the quote mode option. Now from here, you can select the categories that you wish to quote. You can select many categories by simply just adding them.
If you want to quote the products then simply just click on all products so that the add-to quote button will display on each and every product.
