There is an option in the LearnDash setting for changing the complete theme of the plugin.
Go to the settings of LearnDash >> in general option select Design & Content elements and then choose the color, template and other options.
Other than this if you want slight changes in the color of the courses then you can go for the side options in courses and change the content color.
